What’s a festival without some retail and delicious foods? A plethora of innovative gourmet and lifestyle products will be highlighted at the Vegan Market with an aim to support over 25 independent vegan businesses and brands. Feast on signature plant-based dishes from over eight participating restaurants at the Vegan Food Village.

Masterclasses

11:00AM to 12.00PM – Masterclass by Michelin Bib Gourmand Lagnaa, Barefoot Dining 

Master Chef and owner Kaesavan of Michelin Bib Gourmand restaurant Lagnaa, Barefoot Dining has been championing Indian food and its traditions for over 30 years.

In his special masterclass, learn how to incorporate moringa and a variety of spices in a dish that is both easy to whip in the comfort of your home kitchen and benefit from the anti-oxidant and healing properties of this superfood.

12:30PM to 1.30PM – Masterclass by Tamara & Daniel Chavez of CANCHITA Peruvian Restaurant

Daniel Chavez and his Mexican-born wife Tamara Chavez bring together their love for using locally sourced, ingredients in season, as they guide participants through a masterclass showcasing two stellar dishes:

  • Vegan Canchita Ceviche featuring Hearts of Palm, Cherry Tomatoes, Avocado, Sparkling Tigers Milk, Sweet Potato Puree and Canchita Corn
  • Causa Verde, a Potato and Peruvian Yellow Chilli Salad.

Join cookbook author, recipe creator and vegan lifestyle advocate Cherie Tu who is flying in all the way from Sydney to show you how to whip up a delectable BBQ Pulled Mushroom Burger and French Toast Roll-ups that are as good for breakfast as they are for dessert. Uncover the versatility of each ingredient as Cherie brings them to life and listen to her share how she is @thrivingonplants.

3:30PM to 4:30PM – Masterclass by Chef Vincent Wong: Watermelon ‘Tuna’ Sashimi and Vegan Panna Cotta

Experience firsthand Chef Vincent’s holistic approach to food that showcases his creative use of familiar ingredients to present an experience that is playful and inque. Save the date for his Masterclass as he demonstrates how to prepare the unconventional (and sustainable) Watermelon ‘Tuna’ Sashimi cold entree and his own version of local favourite dessert tau huay with a Soy Panna Cotta with Passionfruit, Japanese Grapes and Blue Pea Elderflower Gel.

4:00PM to 5:00PM – Masterclass by Cherie Tu: Food Photography Workshop using Smartphones

Go behind-the scenes with the Sydney-based Instagrammer (@thrivingonplants) as Cherie shares her secrets on how she creates and captures stunning food images and videos for her over 380,000 followers. Find out how to bring your photos to life with Cherie’s nifty tips and tricks on lighting, angles, food styling props, backdrops and even editing using just your smartphone – no expensive cameras or fancy equipment needed!

5:00PM to 6.00PM – Masterclass by Davina Goh: Otah Otah and its adaptation into a Bahn Mi

A dish that is uniquely Southeast Asian, Otah-Otah is a fresh fish paste blended with local herbs and spices, then grilled or steamed. Davina shares step-by-step instructions and demonstrates how to cook the veganized version of Otah-Otah using whole food plant-based ingredients, with this recipe that pays tribute to her Peranakan roots. Participants will also learn how to adapt the steamed Otah-Otah into a fusion-style Banh Mi, making it a meal.

6:15PM to 7.00PM – Masterclass by Hawkerprenuer Wayne Tan & Agatha Teo of Living Wholesome: Thunder Tea Rice

Credited for presenting his version of Thunder Tea Rice (lei cha fan in Mandarin) for the millennial generation, IT-salesperson turned hawkerpreneur Wayne Tan and partner Agatha Teo run Living Wholesome Vegetarian at Bukit Timah Market & Food Centre. At the humble stall, they serve up bowls of this traditional Hakka dish with their own twist for a combination of fresh vegetables, grains, nuts, seeds and herbs that are full of healthy fats, protein, fibre, vitamins and minerals and completely vegan. Participants will be able to learn how to make the healthy yet delicious Thunder Tea Rice.

Families will enjoy this fun, interactive and engaging session on the direct connection between our diets and the future of the planet. Social entrepreneur Ambaree Majumder will use easy-to-understand visual aids and models to explain climate issues and food sustainability to the younger audience and how small shifts in what we eat can have a big impact on the planet.
